Maypop Mimosas

You can substitute passionfruit juice from the store, but see if you can find some ripe maypops (they might even grow in the roadside ditch near your house). Maypops ripen continuously midsummer through fall.

Ingredients

  • 1 part citrus juice (I prefer a mix of fresh orange and Meyer lemon)
  • 1 part sparkling white wine, chilled
  • Juice and seeds from 1 passionfruit, about 1 tablespoon (or strain out pulp and seeds if a smooth drink is preferred)

Preparation

Mix together the juice and pour into champagne flutes, filling each glass a little less than halfway. Top off the rest of the way with sparkling wine and stir gently. Garnish with a thin slice of citrus, if desired, and serve immediately.
